Pimento Cheese: The Greatest Culinary Gift From The South

People are drawn to the South for many reasons -- its welcome drawl, the lively music, the gorgeous architecture -- but most of all, people love the South for its rich and soul-satisfying cuisine. From crispy fried chicken to smoked barbecue to sweet cornbread and tangy collard greens, there are a great many culinary riches in this region. But, there is one dish in particular that has captivated our hearts and stomachs here at Kitchen Daily, and that dish goes by the name of pimento cheese.

It's almost unfair that those who grew up in the South got to enjoy this spread their entire life. Kids are fed a quick lunch of white bread and pimento cheese sandwiches. The spread is served as a topping on baked potatoes (you won't miss the sour cream and chives), hotdogs and hamburgers. And a bowl of pimento cheese with a stack of saltines makes a great hors d'oeuvres, too.

Pimento cheese is a simple dish to recreate in your home kitchen. There are certainly variations to be found according to region and resource, but essentially it is just cheese (we like it with cheddar), mayonnaise, pimentos and salt. You mix it all together and the outcome is like nothing you would expect. It's rich and creamy, with just a little bit of spice -- all the ingredients come together in just the right way.

Some people use grated cheese, but another -- and arguably better -- option is to blend the ingredients together in a food processor until the cheese is just about the size of small course bread crumbs -- much like what you are looking for when you make a pie crust.
